Pumpkin white chocolate muffins

It’s autumn, and we all want something cozy and decadent when we are cold. These pumpkin-spiced muffins are just what the cooler weather is asking for. Spice up your pallet with these luxurious pumpkin white chocolate muffins. It’s an easy recipe I’ve adapted from an old recipe my mother used to use. I’ve added a bit more spice to make the muffins have a natural warming effect, and they are perfect. Indulge yourself today with some cozy, warming muffins.

Ingredients

  •  ¾ cup white sugar
  • ¼ cup melted butter
  • 2 large eggs
  • ¾ cup pumpkin purée
  • ¼ cup milk
  • 1 ½ cups buckwheat flour
  • ¾ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 1/2teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • ½ cup semisweet chocolate chips

Mix dry ingredients.

Beat eggs with sugar, then add pumpkin, butter, and milk, then slowly add dry ingredients and mix well. Add the chocolate chips and bake for about 30 minutes.

Rub butter around your muffin tins, then add a bit of flour to keep them from sticking. You can also use silicone muffin containers or cute paper muffin cups, as this recipe will work for any of those options. Enjoy with a coffee, hot tea, or white hot chocolate.
